The Bishops School, located in San Diego, CA, required a temporary food service operation to facilitate more than 1,000 middle school and high school students per day during their kitchen renovation. The project was nearly one year in duration, and required mobile kitchens, prep kitchens, refrigerated, freezer and dry storage. The tennis courts was the decided site to house the temporary kitchen complex and dining tent structure. Due to the tall tennis court fences and topography, all trailers were required to be lifted over and set in place by crane.
